    If you’ve ever wondered what time of year to visit Vermont, let us come right out and say that it HAS to be Autumn. The white steeples of the chapels and churches are popping in the charming towns of Manchester and Burlington, in perfect contrast to the nature show of burnt orange and red. The temperature is dropping, coating the Green Mountains with blankets of fog. Wafts of apple cider and maple syrup (ALL the maple syrup) fill the air around the cute stops on the side of the road (which are all dressed up for the Halloween festivities).     I write this aboard our flight from Cusco. It’s the 25th of June, and yesterday was the 2018 Inti Raymi festival – FYI the second biggest annual festival in South America (after Rio’s glitzy Carnival which takes place every February).     Machu Picchu. A place that has managed to make its way onto almost everyone's bucket list; everyone's I-do-not-care-how-but-I-need-to-go-even-if-it-is-the-last-thing-I-do Wanderlist.     Nasi Goreng and Mie Goreng. Bánh Cuõn, Phõ and Cao Lâu. Amok, Lok Lak and Kuyteav. Okonomiyaki, Mochi and Sashimi. If you've traveled through Asia (specifically Indonesia, Vietnam, Cambodia and Japan) like we recently have, you'll know that these hard-to-pronounce words are in fact extremely popular (and widely-eaten) dishes from the four countries. Those that know me well, know that I have a slightly sickening obsession with food. I dream about food, rely on food to get me through the hard days (sometimes a little too much), and if I wasn't traveling the world taking pics and telling stories, I'd probably be running a vegan beach-side bakery (maybe that's a dream I need to fulfill in the next decade...
